This spicy garlic oil is nice for frying chicken, fish, and fries.

Ingredients

  • ½ gallon flavorless high smoke point oil, such as canola, peanut, safflower, grapeseed, or soybean
  • 40 cloves garlic
  • 8 Thai bird chiles, stemmed and halved
  • ½ tsp salt

Procedure

  1. Combine all ingredients in a large stockpot.
  2. Heat over low heat for 1 hour.
  3. Strain, cool, and store in the refrigerator until oil smells off, looks smoky, or tastes rancid.
