Ingredients

  • 1 jar (7 ounces) roasted red peppers or pimentos
  • 1 pound sharp or extra sharp cheddar cheese, coarsely grated
  • 2 teaspoons freshly squeezed lemon juice
  • cup mayonnaise

Procedure

  1. Drain and chop red peppers (or pimentos).
  2. Toss peppers with grated cheese.
  3. In a separate bowl, whisk lemon juice and mayonnaise together.
  4. Pour liquid mix over cheese mixture and mix until well-blended.
  5. Keep refrigerated.
